What Are You Eating Today?

Pan fried ribeye steak (medium rare and well seared/caramelised on the outside and perfectly pink in the middle) with par cooked potatoes, carrots and corn that were then sauteed in the butter left over from sautéing the mushrooms in butter!

I would pay $40 for such a dinner!

Braised chuck roast with smashed potatoes and corn. Maybe gravy if I feel like dealing with the drippings.

Roast is already seared, and is currently in the oven braising for a couple of hours. The house smells really good right now.

pixy stix
Those are still around? I haven't seen them in years. Popular when I was a kid. IIRC, if you pour the pixie stix contents into a coke, it will create a foamy coke geyser. A good trick to play when you see an annoying kid holding a bottle of Coke.
My last job was in retail. Part of my job was to order candy. There are still vendors that sell old brands that I thought were gone.

I order some Quaker Oats grits. I keep hearing about it. Corn based. Never had them. I thought I'd try it as a substitute for mashed potatoes that are not great if you're trying to avoid kidney stones.

I am starting to cook for the freezer for our house sitter we will have in a couple of weeks. So I’ve cooked Lamb shanks on a bed of tomatoes, potatoes, carrots, onions, mushrooms and capsicum, with tinned tomatoes and used red wine to rinse out the tin. Slow cooked in the oven for a few hours until the meat falls off the bone.

I use a similar base for rissoles. The butcher makes ones the size of my fist and when done this way they come out tender and juicy.

I buy Dixy Lily grits or Jim Dandy grits. Great change of pace. Good for breakfast or dinner (at dinner, it's a side.) Great with raisins (no need to cook them with the grits -- pour the hot grits over the raisins you've spooned into your cereal bowl), butter, sugar. I use cinnamon sugar. Also I splash a little vanilla into the cooking water. Grits -- besides blues and Jimmie Rodgers records, one of the nicer things the South gave us.
